Staff

The floor staff are casual and friendly, you're supposed to come into the restaurant and have a good time. They are efficient, they know their job, they can make recommendations.

The staff are relaxed, when you come to the beach it is all about relaxing, so you don't have to wash the dishes. They fit in with our theme.

Jo is a great cook. She and I are the cooking team.... Jo suits, she's reliable, stable, she is the hub. It has made us be more brutal in not constantly adding things to dishes, instead we take things away.

Most chefs reckon if you've got to keep adding things then you've stuffed up the dish. You've got to go back.
